I originally cooked this dish as part of my Month of Meals Challenge. One of the aims of the challenge was to find new dishes to introduce into our roster of weeknight meals. The fact that I have started to revisit some of the meals I made and include them in our weekly menus is proof that the challenge was a success! The recipe for the Sheet Pan Fajita’s from Laughing Spatula can be found here. I served the cooked chicken and peppers in wraps with Ol El Paso Salsa, cheese, corn and avocado. If your not counting calories, then these are delicious with a big dollop of sour cream.
