Week Four, Day Five – Our last Month of Meals dinner was this lovely recipe for Sheet Pan Fajitas by Laughing Spatula. I make fajitas a lot as find it quite a simple meal to prepare. I normally only cook the chicken and then serve the remaining ingredients raw, so cooking the peppers was a new twist on an old favourite for us. We really enjoyed the flavour that the cooked peppers added to this dish. I served the cooked chicken and peppers with tortillas, avocado, cheese and the left over sauce from the chilli con carne meatballs that I cooked last night (see the recipe for the sauce here). The sauce was the perfect base for this dish. I plan to whip up a batch of this sauce and put it in the freezer so we can always have it on hand to serve with fajitas. Overall, a great dish which has made something I love to cook feel like a whole new meal!
