If you are looking for a one-dish dinner that will feed the entire family, this is a great option. This meal is vegetarian, but packed with iron and calcium.
500 grams of fresh or frozen spinach
1 bunch of shallots finely chopped
I medium sized red onion finely chopped
2 teaspoons of olive oil
250 grams of mushrooms finely sliced
250 grams of cheddar cheese grated
250 grams of cottage cheese
200 grams of feta cheese
1 handfull of chopped mint
salt and pepper to taste
2 sheets of puff pastry
100 grams of melted butter
Flour for dusting
In a fry pan, add your olive oil and onions. Fry the onions till they are soft and transparent. Now add your shallots and stir till they are softened, then add your mushrooms. Let the mushrooms soften.
Add the spinach to the fry pan; mix thoroughly with onions, shallots and mushrooms. Cook the spinach till there is no water left in your pan. This will take at least 10-15 minutes. Be patient here and make sure there is NO water left in the spinach, otherwise your pie will be watery. Leave to cool.
In a separate bowl, mix your cheddar cheese, cottage cheese and feta with the eggs and mint. Wisk till well combine and add salt and pepper to taste.
Now add your spinach mix to the bowl of cheese. Mix thoroughly.
To prepare your pie, preheat your over to 180°C degrees.
Take a large ovenproof dish and brush the base with melted butter. Dust a clean flat surface with flour and with a rolling pin; shape your puff pastry to fit your dish. Lay the first sheet of puff pastry on the base of your dish. Pour in your spinach and cheese mixture. Finely roll the top sheet of puff pastry and cover your mixture, ensuring it is completely covered. Brush the top sheet of pastry with melted butter.
Bake for 30 minutes or till golden brown. Serve while nice and hot.
